Wonderful job, David! Your is still digesting. Proper maceration is essential to get the textures just right. While I will admit to a sudden, unexpected twinge of queasiness when I first opened my surprise package from Santa Fe, I certainly did not feel any need to grab a barf bag. But then, I turned it over and was faced with the early-morning horror of Martha's Tips!!! Wretch!

Griddled Loin:

Take one small, fresh, grass-fed, no GMO, preferably locally raised by responsible farmers pork tenderloin. Split down the middle. Set to rest overnight in a plastic bag after rubbing it all over with freshly ground spices as for making tandoori chicken. Lightly grease your griddle with ghee and heat to very hot. Quickly sear pork loin on each side, lower heat and let cook for an additional 5-10 minutes until just done. Serve on griddle-warmed fresh naan bread.
